We don't know you, but at Cooxy we love brunches! Half breakfast, half lunch: a really fun meal! And outdoors, it's even better 😉. We therefore offer you an ideal recipe for brunch: vegan pancakes. No you are not dreaming, this is not the first pancake recipe that we offer. But this one is a bit special because it does not contain milk, eggs or butter. The perfect recipe for people who are vegan or lactose intolerant.
The ingredients (for 8 people)
80g cornstarch (cornstarch)
4 tablespoons caster sugar
4 tablespoons baking powder
1 cup of milk (almond, rice, hazelnut…)
8 tablespoons of sunflower oil (or grape seed oil)
2 good pinches of salt
First step: place all the dry ingredients in a large bowl - flour, cornstarch, sugar, baking powder and salt. Then mix everything. Second step: make a hole in the middle of your bowl. Put the milk and oil in it, then mix vigorously with a whisk until you get a smooth paste. Last step: cooking! To do this, turn on your Cooxy connected barbecue using your smartphone application, then set it to 180 ° C. As soon as the hotplate has reached the right temperature, pour a little oil on the heating part of Cooxy. Then make your vegan pancakes by pouring two large tablespoons of batter. When bubbles begin to form on the surface, turn the pancake over and cook for another 1 minute. Repeat with remaining batter.
These pancakes are delicious served warm with grated coconut, maple syrup or even jam, with a side of berries!
